A Tasty Tapa for Christmas: Chorizo in cider (easy)
250 gr chorizo : 350 ml dry cider
Preparation: Cut the chorizo into thick slices place in a flameproof ceramic pan and cover with the cider. Bring to the boil, then reduce the heat to a bare simmer and continue to cook until sauce has reduced in volume by about half, 15 to 20 minutes, turn the sausage occasionally to ensure even cooking. Serve on small plates with some of the pan juices a sprinkling of chopped parsley and a cool glass of Cava - Delicious !!
