Magra Con Tomate Recipe from Murcia

Magra con tomate is pork cooked in a tomato sauce. It is one of those lifelong dishes that you can find in any Spanish bar and that the hungriest usually consume at mid-morning with a few slices of bread and a glass of wine or beer, to fill the stomach. Here´s how to make this easy one pot recipe full of flavour at home:
INGREDIENTS (serves 2)
- a couple of pork chops, cut into half inch pieces
- 2 standard sized cans of chopped tomatoes
- 2 medium roasted red peppers, finely diced
- 1 medium green pepper, finely diced
- 1 large onion, finely diced
- 4 to 6 garlic cloves (depends on how much you like) finely chopped
- Tablespoon or two of smoky paprika
- 2 tbsp of olive oil
- 1/2 glass of red or white wine (whichever you prefer)
- 1 teaspoon of sugar
- Sprinkle of salt & pepper
METHOD
- Pop the oil into your pan and bring up to a medium to high heat
- Throw in the diced pork, and cook until browned all over.
- Remove the pork to one side, but leave as much of the oil in the pan as you can
- Throw in the onion, and the two types of pepper
- Turn the heat down almost immediately, and wait until the vegetables are almost translucent and cooked through
- Add the garlic, stir well and cook for a couple more minutes
- Add your tinned tomatoes & wine
- Sprinkle in the paprika, chuck the pork back in, and add your sugar, salt and pepper
- Cover and simmer for about 20 minutes.
