Gazpacho Andaluz Made Easy. A Delicious Summertime Soup!

Ingredients:
Cold Water 1 large tin of plum tomatoes 1 small onion chopped 3 cloves of garlic 1 cucumber, peeled and chopped 1 medium green bell pepper 1 medium red bell pepper Half a stale French loaf, cut into 1 cubes 1/4 cup olive oil 1/4 cup wine vinegar 1/8 tablespoon salt, pepper to taste
Method:
Soak the bread in the cold water.
Blend together the garlic, onion, bell peppers and cucumber with the vinegar and olive oil. Add the tinned tomatoes and pre-soaked bread then blend till smooth. Rest and chill in the refrigerator for a couple of hours before serving with a garnish of fresh croutons, peeled and finely chopped fresh tomato, cucumber and bell pepper. Enjoy!
